bread pakoras

 BREAD PAKORAS

 BREAD PAKORA IS A FAV BREAKFAST AND TEA SNACK FOR MOST OF US . EVERY ONE LOVES IT . INSTEAD OF GETTING THOSE OILY PAKORAS FROM HOTELS YOU CAN PREPARE IT ON UR OWN . SO HERE IS THE HEALTHY RECIPE FOR BREAD PAKORA LOVERS.
VERY SIMPLE. HARDLY TAKES HALF AND HOUR.

fried. there are other fillings too like paneer cottage,cheese filling,soya granules,cheese and even green peas.
  •             Preparing the potato filling
Peel the boiled potatoes. the potatoes sholud be boiled really well. mash the potatoes when they are still warm.add coriander leaves,green chillies,red chili powder,  amchur powder ,salt to the mash potatoes.mix these with the mashed potatoes. (add as per ur taste). keep aside.

  •                     Preparing besan batter for bread pakoras.
In a bowl take 1 1/2 cup the besan (thick pea flour/gram flour). add ajwain, red chilli powder,garam masala powder, asafoetida and salt as per your taste. add around 1/2 cup of water and mix.if in case the batter is very thick than add a little water to make it slightly thin. the batter should not be very thick or thin. add few drops of oil to batter and mix well

  •                Assembling and frying the aloo bread pakora
before you do the following steps, heat up some oil for deep frying the pakoras on your cutting board, slice the bread into triangle or rectangle slices.take a teaspoon of the mint coriander chutney and apply it evenly on the bread. take around 2 tbsp of mashed potatoes mixture and apply it on bread
cover the potato stuffed slice with the other bread.you can even apply the same green chutney or tomato sauce or garnish cheese . you have now beautiful triangular bread sandwich.dip the sandwich in the besan batter. coat the bread gently with pakoras. take care do'nt keep the stuffed bread sandwich a long time in the batter as bread tends to break. you can easily slid the besan batter coated bread sandwich in the oil. fry the bread pakoras on a medium flame till they are crisp and golden brown .drain on a tissue.

Home made "CHICKEN BIRYANI"

I guess most of us share a love for Chicken Biryani and having spent 17 precious and the most beautiful years in Oman has given me an opportunity to taste a variety of Chicken Biryani dishes. But I would like to share the recipe of the one I cherish the most.

CHICKEN BIRYANI

Ingredients :
Chicken pieces (washed) - half kg
Ginger garlic paste - 1 tbsp
Biryani masala (to be specific, Everest Biryani masala) - 1 tbsp
Curd - 100gms
Red chilli powder - 1 tsp
Turmeric powder - 1 tsp
Mint leaves (finely chopped) - 1 bunch
Corriander leaves (finely chopped) - half bunch
Green chillies (finely chopped) - 3 or 4 nos (depending on your taste)
Onions (sliced) - 3 or 4 nos
Tomatoes (chopped) - 2 nos
Basmati Rice - half kg
A pinch of saffron
Salt to taste

Preparation:

Marinate the chicken with Ginger garlic paste, Biryani masala, Curd, Red chilli powder,  Turmeric powder, chopped Mint & Corriander leaves, Green chillies and salt. Keep refrigerated for overnight.

◆In a pan:
Fry the sliced onions. Once their colour turns golden brown add the chopped tomatoes and fry for some more time. Now, add the marinated chicken pieces and cook on slow fire.

◆In a utensil:
Boil water and add 3 cloves, 3 cardamoms, 1 stick cinnamon, 6 black peppers, salt and the Basmati Rice. Strain the water when the rice is half cooked.

◆In another utensil:
Add Ghee, place a layer of the cooked rice then a layer of the cooked chicken. Keep layering the rice and chicken. Once the layering is done add a pinch of saffron. Cover the vessel with a silver foil and place the lid. Now cook on slow fire for 15 minutes.

Garnish with chopped corriander leaves and some fried onion slices. Your Chicken Biryani is now ready to eat.

**Serving suggestion : Tastes great when served with Raita.

Home Cooked “VEG NOODLES”





My love for Chinese food combined with my desire to eat a healthy meal, encouraged me to experiment with the home-made variety. No !, not the instant 2-minute stuff !!. So, here I go.

RECIPE:
Ingredients:
·        Vegetables of your choice (Carrot, Beans, Cauliflower, Onion, Tomato, Capsicum, Cabbage etc.,) – 3 to 4 cups ( I like my vegetables )
·        Chopped garlic, green chillies, ginger -  ½ a cup (preferably according to taste)
·        Coriander ( I like it ), spring onion ( it’s a Chinese must ) – to garnish
·        Any brand of Veg Hakka Noodles ( 1 pk ) – not the instant variety
Method:
·        Wash & Slice the vegetables into long thin pieces.
·        Place the pan (Tava / Pressure Pan) on the stove.
·        Toss the “3 Gs”(Ginger, Garlic, Green chillies) into the pan
·        Follow it with the onions.
·        Then the rest of the veggies.
·        Add some  red’ chilly powder to make it spicy.
·        Add salt to taste.
·        Let the veggies steam.
·        Simultaneously boil water (6 cups) in a pan & add the Noodles. Let it boil for a couple of minutes.
·        Drain the water & keep the noodles on a flat plate.
·        In a pan, add some oil & toss the noodles for a minute..

·        Mix the Noodles & the vegetables well.
o   Add “Garam” masala for the ‘Indian’ twist
o   For a Chinese flavour, add readymade Manchurian or Schezwan chutney.

COLD COFFEE WITH ICE-CREAM

We are all huge huge fans of ice-cream, coffee, Ain't we??! To cater this need i wasted money, lots and lots on ice-creams and coffee. Then i struck on an idea!
Lovely and easy to make...
COLD COFFEE WITH ICE-CREAM!!!


INGREDIENTS: (very handy indeed!)- (2 servings)

  • coffee (really any coffee!! I used Nescafe)- 2 packets of ₹2 each(lets be precise ;) )
  • Vanilla ice-cream- around 300 ml
  • Milk (I personally do not prefer milk powders. It drains out the taste)- around 300 ml
  • Sugar- 1 teaspoon


METHOD:

  • Mix coffee, milk, sugar and around 150 ml vanilla ice-cream together and blend well (it can be done in a mixer or manually).
  • Take 2 glasses and pour the above mixture.
  • Top it with the remaining vanilla ice-cream.


NOTE-

  • Quantity of coffee and sugar can be changed in accordance with your taste for dark or light coffee.
  • After topping it with ice-cream you can add additional chocolate syrup for a chocolaty taste and better presentation.
  • More ice-cream can be used for topping. After all who doesn't like ice-cream!!! ;)
