My love for
Chinese food combined with my desire to eat a healthy meal, encouraged me to
experiment with the home-made variety. No !, not the instant 2-minute stuff !!.
So, here I go.
RECIPE:
Ingredients:
·
Vegetables of your choice (Carrot, Beans, Cauliflower, Onion,
Tomato, Capsicum, Cabbage etc.,) – 3 to 4 cups ( I like my vegetables )

Chopped garlic, green chillies, ginger - ½ a cup (preferably according to taste)
·
Coriander ( I like it ), spring onion ( it’s a Chinese must ) – to
garnish
·
Any brand of Veg Hakka Noodles ( 1 pk ) – not the instant variety
Method:
·
Wash & Slice the vegetables into long thin pieces.
·
Place the pan (Tava / Pressure Pan) on the stove.
·
Toss the “3 Gs”(Ginger, Garlic, Green chillies) into the pan
·
Follow it with the onions.
·
Then the rest of the veggies.
·
Add some red’ chilly powder
to make it spicy.
·
Add salt to taste.
·
Let the veggies steam.
·
Simultaneously boil water (6 cups) in a pan & add the Noodles.
Let it boil for a couple of minutes.
·
Drain the water & keep the noodles on a flat plate.
·
In a pan, add some oil & toss the noodles for a minute..
·
Mix the Noodles & the vegetables well.

Add “Garam” masala for the ‘Indian’ twist
o
For a Chinese flavour, add readymade Manchurian or Schezwan
chutney.
